Ingredients:
butter 100 grams
sugar 125 grams;
almonds 125 grams;
dark chocolate 125 grams;
3 eggs.
Finely grind the almonds and put them aside.
Grind the chocolate; add the softened butter, the sugar and the three eggs’ yolks;
work with a spoon;
add the almonds and blend more.
In a separate, large, clean bowl, beat the egg’s whites until they are stiff,
Mix in the almond-chocolate mixture,
by gently blending with a wooden spoon.
Put the mixture in an 8 inch round cake pan, covered with greaseproof paper,
cook in 150°C/300 F oven for about one hour.
Let it cool down in the oven.

September 22, 2015 - 2:09 amSummer aka Estate (love the translation) – we have not made the cake yet. When we return from our upcoming trip to Southern Italy we may give it a try. When we see Patrizia we will ask her whether she has ever substituted hazelnuts in place of almonds.
